Citrus aurantium
For a few weeks each spring the bitter orange trees open and the whole country smells of them. The flowers are distilled into ma zhar — orange blossom water — which lives in Moroccan kitchens, on Moroccan tables and in Moroccan hands. It is the single note this entire collection is built on.
